THE OLIVE AND THE VINE
In addition to his ‘Greek Cookery’ talks and
demonstrations, Spiro Anemoyiannis from time to time also runs
short courses on ‘The Olive and the Vine’ as part of our
programme of activities designed to give visitors the
opportunity to learn more about the culture, history and
landscape of Paxos.

Spiro is a real expert on the olive
and knows just about everything there is to know about
olive farming, the production of olive oil, the use of
olives and their oil in cooking, and also about their
medicinal uses. Many people will already know him, as
he runs the Taxidi Bar on the jetty in Loggos. He is also an
accomplished musician, who has played in concerts in the
UK, is often involved in cultural events and national
festivals on Paxos, and has been featured on both Greek
and UK television.
The
courses are held in the Olive Museum at Magazia and in
the surrounding countryside, and last about three
hours. They cover
-
the history of the olive and olive farming on Paxos
-
an introduction to present day olive farming and the production
of olive oil
-
the use of the olive and olive oil in
cooking (with a comparative tasting of different
olive oils), and its medicinal uses
There
is also a
visit to an olive grove and an olive press to see
olive farming and how olive oil is produced.
Although the
main focus of the course is on the olive, Spiro
also covers the history of
viticulture on Paxos and Anti Paxos, and the basics of
viticulture and wine making. There may also be a visit
to see vines growing above Loggos.
A
minimum number of participants is needed for each
course to take place, and the cost depends on the
number of participants.

the aim of which is to improve
